1/2 cup hemp flour1/2 cup freshly ground flax seeds
2 cups ground nuts
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp sea salt
2 eggs beaten
2 very ripe bananas, mashed
2 Tbsp, melted butter or coconut oil
1/4 cup honey
1/4 cup unsweetened apple butter
1/4-1/2 cup apple juice or orange juice (adjust to consistency)
Preheat oven to 350 degrees.
In large bowl, combine hemp, flax, nuts, baking powder, baking soda, and salt. Mix until blended.
In another bowl, mix eggs, honey, apple butter, bananas, and butter or cocnut oil until well blended. Add wet ingredients to the dry ingredients and stir until just blended. Batter will get quite thick. Adjust to proper muffin consistency with juice, if necessary.
Grease large muffin tins with butter or coconut oil. Fill 3/4 full with a batter.
Bake for 15-20minutes. Remove and let cool.
Makes 12 large or 18-24 small muffins.
